Ingredients
  

  • 3 cups cooked navy beans or canned beans, drained and rinsed
  • 1/2 cup ketchup
  • 1/4 cup molasses
  • 1/4 cup brown sugar packed
  • 1 tbsp mustard yellow or Dijon
  • 1 tbsp apple cider vinegar
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • 1/2 tsp smoked paprika for added smokiness
  • 1 cup chicken or vegetable broth or water
  • 4 slices bacon optional, chopped

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • If using bacon, cook it in a Dutch oven or skillet over medium heat until crispy. Remove and set aside, leaving some grease in the pan.
  • Add chopped onions and garlic to the pan, sautéing until soft and fragrant.
  • Stir in ketchup, molasses, brown sugar, mustard, apple cider vinegar, salt, black pepper, and smoked paprika. Mix well.
  • Add the cooked beans and broth, stirring to combine.
  • Transfer the mixture to a baking dish (if not using a Dutch oven) and top with cooked bacon if using.
  • Cover and bake for 45 minutes, then remove the cover and bake for an additional 15 minutes until thickened.
  • Remove from the oven and let rest for 5-10 minutes before serving.

Notes

For a vegetarian version, omit bacon and use vegetable broth. To add heat, mix in chopped jalapeños or a dash of hot sauce.
