Ingredients
  

  • 2 cups mashed sweet potatoes baked or boiled until soft
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1/2 cup evaporated milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 9-inch pie crust store-bought or homemade

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, mash the cooked sweet potatoes until smooth.
  • Add sugar, melted butter, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt. Mix well until fully combined and smooth.
  • Pour the filling into the prepared pie crust, spreading it evenly.
  • Bake in the preheated oven for 50-60 minutes, or until the center is set and a toothpick inserted comes out clean.
  • Remove from the oven and let the pie cool completely before slicing.
  • Serve as is or with a dollop of whipped cream for extra indulgence.

Notes

For a dairy-free version, use coconut milk instead of evaporated milk and plant-based butter. To enhance the flavor, try adding a dash of allspice or ginger.
